- Cost: $10 per person, children under 10 are FREE!

Martin Osis speaks on “Traditional Use of Mushrooms in Chinese Medicine”.
- Chinese people have been using mushrooms as medicine for over 2000 years. The presentation will look at how they use those mushrooms and which ones are the superstars.
- Bio: Martin is a life member of the AMS filling a multitude of roles over the years. He has been lecturing about and giving mushroom courses for decades. His interest in Medicinal Mushrooms led him to study Traditional Chinese Medicine. He is bringing his education and long experience to this different way of looking at medicine and the role mushrooms play.

Chef Zach Eaton
Chef Zach Eaton is excited to return for his second year participating in the Alberta Mycological Society’s Wild Mushroom Expo. He has been a part of the Edmonton food scene for nearly 20 years, working at restaurants such as Blue Chair Cafรฉ, Chartier, and Tryst. Zach is currently an instructor in NAITโs Culinary Arts Program.
He has a deep passion for local ingredients, responsible food practices, and innovative cooking techniques. Zach believes the world of mushrooms provides a vast canvas to explore flavor, technique, and seasonality. His food philosophy is simple: โCook what you love to eat.โ

Chef Alyssa Paron
With over 14 years of experience in the culinary industry, Chef Alyssa Paron brings both skill and passion to every plate she creates. A proud Red Seal Chef for the past decade, she has honed her craft in some of Albertaโs most notable kitchens, including Rge Rd, the Edmonton Convention Centre, Empire Provisions, the Concorde Group Calgary and the iconic Fairmont Hotel MacDonald.
Chef Alyssa is currently a Educational Lab Tech at NAIT. A true mushroom lover, Chef Alyssa is especially excited to share her expertise at this yearโs Alberta Mycological Society Wild Mushroom Expo, celebrating the rich flavours and versatility of this incredible ingredient.
Chef Holly Holt
Holly Holt is an award-winning Chef based in Edmonton, Alberta. She has 15 years experience in the culinary arts and over 20 years of experience in hospitality. She is a proud graduate of NAITโs Culinary Artโs program and loves to continue learning everyday. Holly is the In-House Chef for the Yellowhead Tribal Council and collaborates with EPL as an instructor in The Kitchen. She is also the owner of SheCooks, which offers catering, instructional and consulting services. Her expertise is in contemporary Indigenous cuisine, nutrition and plant-forward cooking. Holly takes pride in her professional, friendly and dynamic approach when working with the community. Holly Holt is a proud Syilx Okanagan woman (SnPinkโtn or the Penticton Indian Band) and connects with her culture through food and art.
Chef Joseph Forest
Joseph Forest is a professional chef, best-selling cookbook author, and consultant with a career spanning over 40 years. His current focus is food as medicine culinary education and health-conscious cooking practices. He loves exploring the healing cuisines and traditional diets of the world with his audiences to look for clues on how to solve health problems related to modern day eating patterns. His message has been a source of inspiration for international audiences.
